1 onion (peeled and finely chopped)
6 eggs (beaten)
½ cup grated Parmesan
2 Tomatoes (sliced)
12 blanched Green beans (trimmed)
1 Tbsp fresh parsley (chopped)

Preparation steps

1.
Heat the oil 10-inch skillet.
2.
Gently cook the onion until soft, but not brown, about 5 minutes. Meanwhile, preheat the broiler to high-heat.
3.
Season the eggs with salt and pepper, add Parmesan cheese and pour into the skillet. Stir gently then leave to cook until the eggs are nearly set.
4.
Add the tomato slices, green beans, parsley and ham. Place the skillet under the broiler until the eggs are golden brown and cooked through. Divide between plates and serve.
