- 1 bunch green Asparagus
- 1 shallot
- 1 garlic clove
- 50 milliliters white wine
- 600 milliliters Chicken broth
- 2 Tbsps Crème fraiche
- 1 Tbsp butter
- 150 milliliters milk
- salt
- peppers (freshly ground)
- Nutmeg (freshly grated)
- chopped Pistachio (for garnish)
Preparation steps

Peel the bottom third of the asparagus and cut the asparagus into small pieces. Peel the shallot and garlic, and chop finely.
Heat butter in a pan and saute the shallot and garlic with chopped asparagus. Deglaze with white wine. Pour in the chicken broth and cook for about 30 minutes until the asparagus turns soft. Then add in the creme fraiche and puree the soup finely in a blender. Season with salt, pepper and nutmeg.

Pour the soup into preheated bowls and pour warm, frothy milk over it. Serve with pistachios sprinkled.
