Preparation steps

1.

For the mango leather: Peel mang, cut the pulp from the pit, as well as small pieces, and puree finely.

2.

For the strawberry leather: Puree the strawberries and raspberries together and pass through a sieve to remove the seeds.

3.

Spread both fruit purees 1/6th" thin on a baking tray lined with baking paper and dry in a preheated oven at 50°C / 120˚F convection oven (or 65˚C/145˚F regular oven) for about 5 hours; to do this, clamp a wooden spoon handle between the oven and the oven door so that the moisture can escape.

4.

Once the fruit puree is leather hard, remove the tray from the oven, let cool for about 20 minutes, then cut into strips and roll up loosely.
