100 milliliters unsweetened Coconut milk (canned)
150 grams Arborio rice
1 small Pineapple
1 Papaya
2 Banana
1 Vanilla bean

Preparation steps

Boil the milk with the coconut milk and then add the rice. Cover and simmer over low heat for 20 minutes, stirring occasionally.

Peel the pineapple, cut into quarters lengthwise, free from the central stalk and chop. Cut the papaya in half and remove the core. Loosen and chop the flesh from the shell. Peel the banana and cut into slices. Slit the vanilla bean lengthwise and scrape out the marrow.

3.

Mix the vanilla seeds into the rice pudding along with the fruit and serve as a sweet main dish.
