150 grams Pastry flour
10 grams fresh Yeast
4 Tbsps sugar
6 Tbsps lukewarm milk
2 egg yolks
1 Tbsp softened butter
100 grams Quark
1 tsp grated Lemon peel
2 tsps cornstarch
½ Pear
½ Apple
2 Plum
50 grams green Grape
30 grams lingonberry
1 Tbsp Pine nuts

Preparation steps

Place flour in a bowl. Create a well in center. Crumble yeast into well and mix with 1 teaspoon sugar, lukewarm milk and a little flour. Cover and let stand for 15 minutes. Add 2 tablespoons sugar, 1 egg yolk and butter. Knead well, cover and leave in a warm place for 30 minutes.

Mix remaining egg yolk with quark, lemon zest, 1 tablespoon sugar and cornstarch. Rinse, trim and chop fruit as needed.

Briefly knead dough, roll out on a floured surface and line a greased baking dish with dough, pressing it to form. Add quark mixture, top with fruit and bake in a preheated oven at 200°C (approximately 400°F) for 10 minutes. Sprinkle with remaining sugar and pine nuts. Bake for another 10-12 minutes. Remove, cool, slice and serve.
