2 Papaya
2 cooked Chicken breasts
1 small muskmelon
2 Tbsps small, pickled Caper
2 Limes
2 tsps honey
1 Tbsp finely, chopped cilantro

Preparation steps

1.

Rinse lime in hot water, wipe dry and finely grate zest. Squeeze juice from lime. Mix lime juice in a bowl with honey.

2.

Peel papaya, cut in half, remove seeds and cut flesh into small cubes.

3.

Cut chicken in half lengthwise and cut crosswise into thin slices.

4.

Mix papaya and chicken in a large bowl with lime juice, lime zest and capers, mix, add cilantro and stir. 

5.

Cut cantaloupe in half, remove seeds and cut into eighths.

6.

To serve, arrange 2 melon wedges on each plate and distribute papaya chicken salad over top.
