4 Chicken breasts
2 Tbsps butter

1 Tbsp Curry powder
1 ripe Pineapple
100 Crème fraiche
3 Tbsps Orange juice
1 Tbsp soy sauce
2 Tbsps sesame oil
1 pinch cayenne pepper
4 Tbsps cooked Rice
2 Tbsps ham (finely diced)
2 Tbsps Peas (frozen, blanched)
mint (for garnish)

Preparation steps

1.

Rinse the chicken breast fillets, pat dry and rub with curry, salt and pepper. Heat some butter in a pan and sear the fillets on each side for 4 - 5 minutes. Allow to cool.

Peel the pineapple thoroughly, cut lengthwise into quarters and remove the hard stalk. Cut the flesh into small pieces and place them with the meat in a bowl.

For the dressing, combine the crème fraîche with the orange juice, soy sauce and sesame oil and season with salt, pepper and cayenne pepper.

Cut the chicken breasts into cubes and mix with the dressing and the pineapple chunks. Season the salad to taste and mix in the rice, ham and peas.

Serve garnished with mint leaves.
