- 6 cups Fusilli
- 1 Granny Smith Apple (rinsed and diced)
- 1 fuji Apple (rinsed and diced)
- 1 Tbsp lemon juice
- 3 cups mixed greens (trimmed; rinsed and spun dry)
- ⅔ cup red Cherry tomatoes (rinsed and halved)
- ⅔ cup yellow Cherry tomatoes (rinsed and halved)
- 2 Tbsps balsamic vinegar
- ¼ tsp hot Mustard
- 4 Tbsps good-quality olive oil
- salt (to taste)
- freshly ground Black pepper (to taste)
Preparation steps

In a pot of boiling salted water, cook the pasta according to package instructions until al dente. Rinse in cold water and drain well.

Place the diced apples in a large bowl and drizzle with lemon juice. Add the mixed greens, tomato halves, and cooked pasta and too to incorporate.
3.
In a small bowl, combine the vinegar and mustard. Add the oil in a slow stream, season with salt and pepper and whisk well. Drizzle dressing over the salad and toss well. Serve.
