Preparation steps

1.

Peel garlic and crush in a mortar. Rinse herbs.

Combine 1 liter (approximately 4 cups) of water with bay leaves, herbs and 2 tablespoons of olive oil, season with salt and pepper and bring to a boil. Add garlic and simmer for about 15 minutes on low heat.

3.

Toast bread slices, arrange on plates and drizzle with remaining oil. Sprinkle with cheese. Remove herbs from the soup, season with salt and pepper to taste and pour over bread slices. Serve immediately.
