2 onions
1 garlic clove
3 Tbsps butter
250 grams day-old white bread
2 Tbsps freshly chopped Fresh herbs (such as dill and parsley)
1 pinch dried Peperoncino (grated)
120 grams grated pecorino romano
freshly ground peppers
½ tsp Coriander (crushed)
salt
freshly grated pecorino romano (for garnishing)

Preparation steps

Peel onions and garlic and chop finely. Heat 1 tablespoon of butter in a saucepan and saute onions and garlic for a few minutes. Add broth and simmer for about 10 minutes on low heat.

Preheat the oven to 180 ° C convection.

Cut bread into slices. Heat remaining butter in a pan and cook bread until golden brown on both sides. Line baking dish with bread slices and sprinkle with herbs, pepperoncini and cheese. Pour soup over and season with pepper and coriander seeds. Bake in preheated oven at 180°C (approximately 350°F) for about 20 minutes or until golden brown. Remove from the oven and season with salt and pepper to taste.

Pour soup into preheated bowls and sprinkle with freshly grated cheese. Serve.
