- 250 grams day-old white bread
- 2 Tbsps freshly chopped Fresh herbs (such as dill and parsley)
- 1 pinch dried Peperoncino (grated)
- 120 grams grated pecorino romano
- freshly ground peppers
- ½ tsp Coriander (crushed)
- salt
- freshly grated pecorino romano (for garnishing)

Peel onions and garlic and chop finely. Heat 1 tablespoon of butter in a saucepan and saute onions and garlic for a few minutes. Add broth and simmer for about 10 minutes on low heat.

Preheat the oven to 180 ° C convection.

Cut bread into slices. Heat remaining butter in a pan and cook bread until golden brown on both sides. Line baking dish with bread slices and sprinkle with herbs, pepperoncini and cheese.
