700 grams red onions
2 Tbsps sunflower oil
2 tsps sugar

800 milliliters Beef broth
200 milliliters dry white wine
2 garlic cloves
1 tsp lemon juice
8 slices Baguette
60 grams freshly grated Gruyere
2 Tbsps freshly chopped parsley

Preparation steps

Peel onions and cut into thin rings. Heat oil in a saucepan and saute onions for 10-15 minutes or until soft, stirring. Season with sugar, salt and pepper and simmer for another 10 minutes, stirring occasionally, until golden brown.

Add broth and wine, bring to a boil and simmer for another 15 minutes. Peel garlic and squeeze through a garlic press into the soup, season with lemon juice, salt and pepper.

The oven to preheat grill.

Pour onion soup into 4 ovenproof soup bowls (or ramekins). Top each bowl with 2 slices of baguette and spread cheese on top of bread slices. Bake in preheated oven under a broiler for about 5 minutes or until cheese has melted, watching carefully. Serve sprinkled with parsley.
