- For the base
- 1 cup ginger Biscuit
- ¾ cup chopped, toasted Nut (e. g. hazlenuts, almonds, walnuts)
- ¼ cup unsalted butter (melted)
- For the filling
- 1 ⅛ cups Ricotta cheese
- 2 ¼ cups Mascarpone
- 4 Tbsps powdered sugar
- 6 tsps honey
- To decorate
- rosemary
- Red currant
- powdered sugar
Preparation steps
1.
Butter a deep 17cm-20cm / 7"-8" springform tin and line the base with non-stick baking paper.
2.
For the base: stir together the biscuit crumbs, nuts and melted butter. Press into the base of the tin and chill.
3.
For the filling: beat together the ricotta and mascarpone until smooth.
4.
Beat in the the icing sugar and honey until smooth.
5.
Spoon over the biscuit base. Chill overnight.
6.
Carefully remove from the tin and decorate with rosemary and red currants. Sift a little icing sugar over the top.
