- 7 ozs Multi-grain cracker
- 1 Tbsp cocoa powder
- 2 ½ ozs melted butter
- 1 lemon
- ¾ oz ginger (1 piece)
- 6 ½ ozs milk (whole)
- 3 Tbsps whole cane sugar
- 1 tsp ground Turmeric
- 1 egg
- 2 egg yolks
- 9 ozs plain Cottage cheese (drain liquid)
- 1 Tbsp Rice flour
- 1 oz Whole grain Wheat semolina
- 18 ozs Strawberries
- 1 Lime
- 1 Tbsp honey

Preparation steps
Crumble cookies, mix in cocoa powder and butter. Place dessert rings on a baking tray lined with baking paper. Pour in cookie mixture, press down on bottom and press up an edge. Chill.
Meanwhile, rinse lemon, rub dry, grate peel and squeeze juice. Peel ginger and cut into slices. Boil milk with sugar, ginger, turmeric and lemon zest until sugar is dissolved. Remove from heat and let steep for 10 minutes. Then pour through a sieve. Mix milk with egg, egg yolks, lemon juice, cottage cheese, rice flour, and semolina. Pour onto the cookie bases and bake in a preheated oven at 160 °C / 320 °F for 40 minutes. Then pull off rings.
Meanwhile, clean, wash and dice strawberries. Rinse lime, rub dry, grate peel, squeeze juice and mix with berries and honey. Arrange the tartlets with strawberry tartar.
