For the dough
225 grams soft butter
225 grams brown sugar
1 egg
350 grams Molasses
1 tsp Ground cinnamon
1 tsp ground ginger
1 tsp ground allspice
1 tsp Baking powder
¼ tsp salt
450 grams Pastry flour
2 Tbsps cocoa powder
Pastry flour (for the work surface)
For decoration
100 grams powdered sugar
1 tsp Orange juice
red Ribbon

Preparation steps

For the dough: Whip butter with sugar until fluffy. Stir in the egg. Mix in molasses, cinnamon, ginger, allspice, baking powder and salt, then flour with cocoa. Gradually knead until a smooth dough is formed. Divide dough into quarters, shape into patties, cover in plastic wrap and chill for about 3 hours.

Roll out pieces of dough thinly on a floured surface to about 4 mm (approximately 1/8 inch) and cut out figures. Allow cookies to chill for 20 minutes.

Preheat oven to 200°C (approximately 400°F).

Place cookies on a baking sheet lined with parchment paper and bake in oven for about 15 minutes. Remove from oven and let cool for 5 minutes. Then allow to cool on a wire rack.

For decoration: Mix powdered sugar with orange juice until thick and fill into a piping bag or freezer bag (with the tip cut off). Decorate the figurine cookies with frosting and bows and allow to dry thoroughly, then serve.
