- For the muffins
- ⅔ cup butter
- ⅔ cup sugar
- 1 egg
- 1 ⅔ cups all-purpose flour
- 2 ½ tsps Baking powder
- ½ tsp baking soda
- 1 pinch salt
- 1.333 cups plain Yogurt
- 1.333 cups fresh Cranberry
- To decorate
- 1 ⅔ cups powdered sugar
- 3 Tbsps Cranberry juice
Preparation steps
1.
For the muffins: heat the oven to 180°C (160° fan) 350°F gas 4. Grease a 12 hole muffin tin.

Beat the butter and sugar in a mixing bowl until soft and light. Gradually beat in the egg until smooth.

Sift in the flour, salt, baking powder and bicarbonate of soda and stir into the egg mixture with the yoghurt until just combined. Gently stir in the cranberries.

Spoon into the tins and bake for 20-25 minutes until golden and risen. Cool in the tins for a few minutes, then place on a wire rack to cool completely.
5.
To decorate: sift the icing sugar into a bowl and stir in the cranbnerry juice to form a smooth thick icing. Spoon over the muffins and leave to set.
