- For the sauce
- 1 cup Chili sauce
- 1 Tbsp mild Mustard
- 0.333 cup runny honey
- ¼ cup Oil
- 2 garlic cloves (finely chopped)
- 88 ozs Ham legs (with fat)
- For the salad
- 3 Tbsps white wine vinegar
- sugar
- 3 Tbsps olive oil
- 8 cups mixed Lettuce

Preparation steps
1.
Heat the oven to 150°C (130°C in a fan oven), 300°F, gas 2.

Mix together the chilli sauce, mustard, honey, oil and garlic. Cross-hatch the fat on the meat and brush the meat with half of the sauce
3.
Place in the oven and roast for approx. 3 hours. Brush with the remaining sauce every so often.
4.
Make a salad dressing by mixing together the vinegar, salt, ground black pepper, a pinch of sugar and the oil. Arrange the lettuce leaves on plates, drizzle with the dressing and place the ham on top.
