1 cup soft butter (scant)
1 cup sugar
1 Tbsp Vanilla sugar
3 eggs
2 ½ cups Gluten-free flour
½ cup Almond flour
2 tsps Baking powder
6 sour Apple (approx. 1 kg, peeled, quartered, deseeded and scored along the rounded edge)
1 Tbsp lemon juice
1 Tbsp slivered almonds
3 Tbsps Apricot Jam

Preparation steps

1.
Mix together the butter, 200 g sugar and the vanilla sugar until creamy. Stir in the eggs one at a time.
2.
Mix together the flour, almonds and the baking powder and quickly stir into the wet ingredients. Drizzle the apples with lemon juice.
3.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and line a baking tray with greaseproof paper.
4.
Transfer the mixture to the prepared baking tray and add the apples.
5.
Mix the remaining sugar with the almonds and sprinkle on top of the apples. Bake for around 35 minutes; test with a wooden stick to see if it is done.
6.
Gently heat the jam in a pot and brush onto the warm cake. Leave to cool and then serve sliced.
