Do without bread rolls if you have gluten intolerance or celiac disease? Not with us! Thanks to the addition of eggs and milk, this cornbread is also a great source of minerals such as calcium, iron, and zinc.
Of course, you can replace the lactose-free products with normal milk products. If you have buttermilk at home, you can use it instead of the milk-lemon mixture.

- 4 ½ ozs butter
- 18 ozs lactose-free milk (3.5% fat)
- 2 Tbsps lemon juice
- 9 ozs fine Cornmeal
- 17 ozs gluten-free flour
- 1 ½ ozs Raw cane sugar
- 2 tsps gluten free Baking powder
- 1 ½ tsps baking soda
- 1 tsp salt

- 2 eggs

Preparation steps
Melt butter over low heat, then allow to cool slightly. Remove 2 tablespoons and set aside. Mix milk with lemon juice and let stand for 15 minutes.
Mix cornmeal, flour mix, sugar, baking powder, baking soda, salt and pepper. Beat eggs in a large bowl. Stir in lemon milk mix and melted butter. Add flour mixture and mix briefly until smooth.
Line baking tray with baking paper, pour in batter and smooth out. Bake in preheated oven at 200 °C / 400 °F for 15 minutes.
Remove from oven and brush the surface with butter set aside and bake for additional 15 minutes until done. Let cool briefly and serve while still warm.
