18 ozs lactose-free milk (3.5% fat)
2 Tbsps lemon juice
9 ozs fine Cornmeal
17 ozs gluten-free flour
1 ½ ozs Raw cane sugar
2 tsps gluten free Baking powder
1 ½ tsps baking soda
1 tsp salt

1 Baking sheet (20 x 30 cm)

Preparation steps

1.

Melt butter over low heat, then allow to cool slightly. Remove 2 tablespoons and set aside. Mix milk with lemon juice and let stand for 15 minutes.

Mix cornmeal, flour mix, sugar, baking powder, baking soda, salt and pepper. Beat eggs in a large bowl. Stir in lemon milk mix and melted butter. Add flour mixture and mix briefly until smooth.

Line baking tray with baking paper, pour in batter and smooth out. Bake in preheated oven at 200 °C / 400 °F for 15 minutes.

Remove from oven and brush the surface with butter set aside and bake for additional 15 minutes until done. Let cool briefly and serve while still warm.
