- ½ cup gluten-free all purpose flour
- ½ cup Chickpea flour (garbanzo)
- 1 Tbsp light brown sugar
- ¼ tsp salt
- ½ tsp gluten-free Baking powder
- ¼ tsp cayenne pepper
- 1 egg
- 1 egg white
- 2 Tbsps chopped thyme
- 0.333 cup finely chopped Pistachio
- 5 sun-dried tomatoes (in oil)

Preparation steps
1.
Heat the oven to 180°C / 350°F. Line a baking tray with non-stick baking paper.
2.
Sift the flours, sugar, salt, baking powder and cayenne pepper into a mixing bowl.
3.
Add the egg, egg white and thyme and stir well to combine. The dough will be very stiff.
4.
Add the chopped pistachios and tomatoes and work into the dough.
5.
Turn the dough out onto a lightly floured surface and knead lightly. Pat roll into a 10" disk.
6.
Cut the disc into 8 pieces and place them at least 1" apart on the baking tray.
7.
Bake for 10 minutes. Turn the pieces over and bake for a further 10 minutes until dry and lightly browned. Place on a wire rack to cool completely. Garnish with thyme.
