- 17 ozs cooked potatoes
- ¼ cup vegetable oil
- 1 ½ tsps salt
- 2 ½ cups gluten-free bread flour (brown)
- 2 Tbsps rolled oats
- 1 ½ tsps Dried yeast
- 1 cup warm water (more if needed)
Preparation steps
1.
Mash the potatoes with the oil and salt. Set aside.

Put the flour and oats into a mixing bowl, make a well in the middle and pour in the warm water.
3.
Sprinkle the yeast on top and leave to stand for a few minutes until bubbles appear.
4.
Add the mashed potatoes and mix well. You may need to add more flour or water to form a dough that leaves the sides of the bowl clean.
5.
Place the dough in a oiled bowl. Cover with oiled cling film and leave until until doubled in volume.
6.
Shape it into a loaf shape and place on a baking tray lined with non-stick baking paper. Cover as before and leave to stand for 30 minutes.
7.
Heat the oven to 200°C (180° fan) 400°F gas 6.
8.
Bake for 40 minutes until cooked through. Place on a wire rack to cool.
