1 roll Goat cheese (about 400 grams or 14.1 ounces)
3 boiled, peeled Beets
½ bunch parsley
½ bunch Sorrel
4 Tbsps olive oil
2 Tbsps lemon juice
Sea salt

Preparation steps

1.

Slice beets and goat's cheese about 1 cm (approximately 1/3 inch) thick. Place slices side-by-side on a board. Use a cookie cutter to cut out disks from the beets. Use a round cookie cutter with a crimped edge to cut disks from goat cheese.

Rinse parsley and sorrel and shake dry. Set 4 pieces of sorrel aside for garnish. Remove stalks from remaining sorrel and purée with parsley, oil and lemon juice. Season with sea salt.

3.

Stack up beets and goat cheese. Drizzle with sauce and serve garnished with a leaf of sorrel.
