- 2 cups potatoes (peeled and chopped)
- 1 small carrot (peeled and chopped)
- 1 Salmon fillet (cooked and flaked)
- 2 tsps chopped Chives
- 1 Tbsp butter (melted)
- sunflower oil (for frying)
Preparation steps

Cook the potatoes and carrot in boiling water for about 10 minutes, until tender.

Drain the potatoes and carrots and leave to dry and cool slightly.

Put the potatoes, carrots, salmon, chives and melted butter into a bowl and mash together.

Put some flour into a bowl and dust your hands. Shape the potato mixture into 8 patties. Lightly dust each fishcake with flour and then chill until firm.
5.
Heat a little oil in a non-stick frying pan and cook the fish cakes for about 3 minutes each side until golden brown. Drain on kitchen paper.
