250 grams Cod
600 grams predominantly waxy potatoes
1 carrot
1 onion
1 egg
Pastry flour (as needed)

1 splash lemon juice

3 Tbsps vegetable oil (for cooking)

Preparation steps

Rinse cod, pat dry and cut into small cubes. Peel, rinse and finely grate potatoes. Squeeze, using a kitchen towel, and collect all resulting potato juice. Let juice settle and collect all starch on the bottom. Peel carrot and onion. Grate carrot finely and chop onion finely. Combine fish, potatoes, starch, onion and carrot. Add enough flour to make malleable mixture and season heavily with salt, lemon juice and pepper. Shape into about 12 small patties.

Heat oil in a nonstick pan and cook patties for about 4-5 minutes per side. Drain on paper towels. Arrange on plates and serve.

If desired, serve with tartar sauce.
