Preparation steps

Rinse the potatoes and boil in salted water for about 30 minutes until done. Drain, peel, and press and evaporate through the ricer. Peel the carrot and finely grate. Chop the salmon as finely as possible. Mix the salmon with 1 egg and add with the parsley to the potatoes. Season with salt and nutmeg and knead to a well-moldable material. Add breadcrumbs as required. Shape into small patties and coat with flour. Whisk the remaining egg and dip the patties in the eggs, then roll in the breadcrumbs.

Preheat the oven to 80°C (approximately 175°F). Cook the patties in a pan in hot oil until golden brown about 2 minutes on each side. Then place them on a lined baking sheet with foil and keep warm in the oven until all patties are cooked. Serve with lemon wedges.
