- 53 ozs cut-up chicken (breasts, thighs, drumsticks, etc.)
- 1 Tbsp reduced-sodium soy sauce
- 1 tsp Black pepper
- ¼ cup fresh lemon juice
- 2 eggs (lightly beaten)
- ½ cup all-purpose flour
- 1 tsp salt
- 3 cups Canola oil (more if needed)
- Lettuce (for garnish)
- 1 ripe Tomato (for garnish)
- cooked white rice (to serve)
Preparation steps

Rinse the chicken pieces under cold running water and pat dry with paper towels. Place in a large bowl.

In a small bowl, whisk soy sauce, pepper, and lemon juice together. Drizzle over chicken pieces, mixing to coat well. Set aside and marinate for about 45 minutes. After 30 minutes, combine the eggs, flour and salt. Pour over the chicken and mix until the chicken is well coated.

Heat the oil in a wok or heavy bottomed skillet over high heat until the temperature reaches 190°C | 375F. Reduce heat to medium. Using tongs, carefully lower the chicken, one piece at a time into the hot oil. Chicken should be completely immersed in oil. Do not over crowd the pan, work in batches if necessary. Fry the chicken for 10 to 15 minutes, turning as necessary, or until the chicken is golden brown cooked through and tender.

Drain chicken on absorbent paper towels. Arrange chicken on a serving platter. Garnish with lettuce and sliced tomato. Serve with rice.
