- 0.333 cup flour
- 1 cup milk (3.5 % fat)
- 0.333 cup Chocolate couverture (40 % cacao)
- 0.333 cup sugar
- 1 pinch salt
- In addition
- melted butter (to butter the dishes)
- sugar (for the dishes)
- powdered sugar
Preparation steps

Butter the soufflé dishes or cups evenly with cooled (almost cold) melted butter and sprinkle with sugar. The base and sides of the dishes must be completely covered. Tip out the excess sugar. Preheat the oven to 200°C/400°F.

Separate the eggs.

Knead together the butter and flour. Put the milk into a pan, add the chopped chocolate couverture and sugar and bring to the boil, stirring. Break the flour and butter mixture into pieces and stir into the boiling milk one at a time, stirring until the flour has bound with the liquid and formed a homogenous mass. Let cool to lukewarm, then whisk in the egg yolks one at a time, whisking until the mixture is smooth and creamy again.

Beat the egg whites with a pinch of salt until they form soft peaks.

Stir about 1/4 of the beaten egg white into the souffle mixture with the whisk, to lighten the mixture. Then fold in the rest of the beaten egg with a wooden spoon. Fill the prepared dishes or cups with the mixture to about 1 cm/1/2 inch below the rim. Place the dishes in a baking dish and add boiling water to a depth of about 1.5 cm/3/4 inch below the rim of the dishes. Bake at 180-200°C/350-400°F for 25-30 minutes. Take out of the oven. Place a paper heart on top of each souffle and sprinkle with confectioners' sugar. Remove the paper heart and serve immediately.
