- For the pastry
- 2 cups flour
- ¾ cup ground almonds
- ½ tsp Baking powder
- ½ cup sugar
- 1 egg
- ⅞ cup chilled butter (in chunks)
- butter (for the tins)
- flour (for the tins)
- flour (for working the pastry)
- For the filling
- ½ cup cream cheese
- 2 Tbsps powdered sugar
- 1 Tbsp Corn starch
- ½ tsp lemon zest
- 2 cups seedless, white Grape
- powdered sugar (for dusting)
Preparation steps
1.
Mix the flour with the almonds, baking powder, sugar and a pinch of salt and shape into a mound on the work surface. Make a well in the centre and break the egg in to the well. Dot the butter around the edge of the well. Using a large knife, chop through all the ingredients to form a crumb-like texture, then quickly work together by hand to form a smooth pastry. If necessary, add a little extra cold water or flour. Shape into a ball, wrap in cling film and rest in the refrigerator for approx. 1 hour.
2.
Heat the oven to 350°F, and grease the tartlet tins with butter.
3.
Beat the cream cheese together with the icing sugar, corn starch, and lemon zest.
4.
Divide the pastry into 6 equal portions and roll out to the size of the tins. Line the tins with the pastry, forming an edge. Spread with the cream cheese mixture then top with the grapes. Bake for approx. 25 minutes.
5.
Take out of the oven and leave to cool completely. Serve dusted with icing sugar.
