- 3 cups Penne (cooked)
- ¾ cup olive oil
- 2 Tbsps fresh lemon juice
- 2 cloves garlic cloves (minced)
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- ½ cup fresh Basil (or italian parsley)
- 6 large Pepperoncini
- 1 red Bell pepper (diced)
- 1 ¾ cups Feta (crumbled)
- ¾ cup whole, greek Olives
Preparation steps
1.
Bring a large pot of salted water to a boil. Add the pasta and cook per package directions or until al dente. Place in cold water to stop cooking. Drain pasta.

In a small bowl whisk together olive oil, lemon juice, garlic, salt and pepper. Set aside.
3.
In a large salad bowl, combine all remaining ingredients with pasta. Drizzle with dressing. Toss to coat. Cover and chill in the refrigerator for at least two hours before serving to incorporate flavors. Serve.
