- 8 bone-in lamb chops (trimmed)
- 1 tsp ground Cumin
- 1 tsp paprika
- ½ tsp dried oregano
- ¼ cup olive oil
- 2 cups Bean sprout
- 4 Vine Tomatoes (cored and diced)
- ½ Red onion (finely sliced)
- cilantro (chopped)
- 1 Lime (juice)
- Tortilla chip (to serve)
- salt
- freshly ground Black pepper

If checking with a meat thermometer, the chops should register at least 71°C|160F for medium.
Preparation steps
1.
Preheat a griddle pan over a moderate heat until hot.
2.
Rub the lamb chops with the spices and seasoning. Drizzle with olive oil and cook, in batches, in the griddle pan for 3 minutes on both sides for medium meat.

Remove to a tray and cover with aluminium foil, leaving them to rest for at least 5 minutes.
4.
Toss together the olive oil, beansprouts, tomatoes, red onion, coriander, lime juice, and seasoning in a mixing bowl.

Serve the salad with the lamb chops and tortilla chips on the side.
