500 grams Cranberry
1 organic Orange
150 milliliters Grape juice
100 grams sugar
1 cloves
2 Star anise
1 Cinnamon stick
1 Vanilla bean
400 grams Goat cheese
4 Tbsps honey
4 thyme
1 handful Purslane (for garnish)

Preparation steps

Rinse cranberries and drain. Rinse orange in hot water, wipe dry and finely grate zest. Squeeze juice from orange. Mix orange juice in a saucepan with grape juice, 1 teaspoon orange zest, 100 grams (approximately 7 ounces) sugar and spices. Add vanilla pod but in half lengthwise and cranberries and simmer over medium low for 5-10 minutes. Then remove the saucepan from heat. If desired, add remaining sugar. Remove spices.

Preheat the oven to 220°C (approximately 425°F).

Rinse thyme, pat dry and pluck leaves from stem. Cut goat cheese into slices and place on a baking sheet lined with parchment paper. Brush each disc with some honey, sprinkle with thyme and bake in the preheated oven until cheese begins to melt.

Spread some cranberry mixture on plates, place goat cheese on top and drizzle with a little more sauce. Serve immediately.
