5 ozs air-dried Prosciutto (10 slices)

Preparation steps

Clean white asparagus and cut off woody ends. Rinse lime and orange, rub dry and cut into slices. Wash thyme and shake dry. Spread 4 large pieces of aluminum foil on a work surface. Alternate lime and orange slices on each piece, top each with 5 spears white asparagus and salt. Place 1 tablespoon butter and 2 sprigs thyme on each asparagus. Fold the foil around the asparagus, add 3 Tbsp of vegetable stock to each and close the foil to form packets.

Wash green asparagus, cut off the woody ends. Cut prosciutto in half lengthwise and wrap each asparagus spear in 1 slice of prosciutto.

Brush grill grate with oil. Grill the green asparagus over direct heat on the preheated grill (about 350˚ F), covered, for 5 minutes. Then place the packets with the white asparagus on the grill and grill both together for another 8-10 minutes.

Meanwhile, wash the parsley, shake dry and pluck the leaves. Season the green asparagus with pepper and sprinkle with the parsley to serve. Open the packets with the white asparagus and arrange them together with the green asparagus.
