16 King prawn (peeled and deveined)

300 grams Natural yogurt
3 Tbsps Whipped cream

1 Tbsp Lime zest (for garnish)

Preparation steps

1.

For the skewers: Preheat the grill. 

2.

Rinse the herbs, shake dry and pluck the leaves. 

3.

Cut the melon flesh into bite-sized pieces. Rinse the shrimp, pat dry and arrange on wooden skewers with the melon and herbs.

4.

Season with salt and pepper, drizzle with olive oil and grill for 3-4 minutes per side.

5.

For the lime yogurt sauce: Combine the lime juice, yogurt, cream and honey. Season with salt and pepper.

6.

Serve the skewers with lime yogurt sauce on wooden serving plates. Garnish with lime zest, herbs and lime wedges.
