800 grams King prawn (deveined and peeled down to the tail)
1 muskmelon
1 scallion
4 Tbsps Lime juice (freshly squeezed)
1 Tbsp lemon juice (freshly squeezed)
3 Tbsps Lemon peel
4 Tbsps Yogurt (0.1% fat) (1.5% fat)

Preparation steps

Cut the melon, remove the seeds, cut into slices, remove the skin and cut the flesh into small cubes. Rinse the scallion, trim and cut into small rings, then mix with the melon.

Mix the yogurt with 1 tablespoon of oil and the lemon juice and season with salt and pepper.

Heat 2 tablespoons of oil in a pan and brown the shrimp for 2-3 minutes. Season the shrimp with salt, pepper and lime juice. Place the melon and scallion mixture with the shrimp on plates. Drizzle with the yogurt sauce and serve sprinkled with lemon zest.
