1 ⅕ kilograms Sweet potato
vegetable oil
For the tomato sauce
2 cans crushed Tomatoes (each 450 grams)
4 Tbsps Tomato paste
1 tsp oregano
1 bunch scallions
1 garlic clove
1 tsp cilantro
1 tsp Cumin
2 chili peppers
salt

Preparation steps

Cut the ends off of the scallions, then cut into thin rings. Peel and finely chop garlic. Heat oil and fry onion, garlic, tomatoes, tomato paste and oregano. Let simmer over medium heat for 30 minutes. Halve the chillies lengthwise, remove the seeds and finely dice. Add the cumin, coriander and chillies to the sauce. Season with salt and pepper, then leave to cool to room temperature.

Quarter the sweet potatoes lengthwise or slice. Brush with a little oil and grill on each side for about 5 minutes over low to medium heat.

Serve the grilled sweet potatoes with the tomato sauce.
