4 pcs Swordfish (each about 160 grams)
600 grams green Beans
2 Tbsps almonds (sliced)
400 grams Rice
1 tsp Turmeric
1 generous pinch allspice (ground)
1 Tbsp olive oil
4 Tbsps butter
1 cup Crème fraiche
2 Tbsps Yogurt (0.1% fat)
1 generous pinch Saffron
salt
peppers (freshly ground)

Preparation steps

1.

Rinse and halve green beans. Cook in boiling salted water for about 2-3 minutes or until al dente. Rinse. 

2.

Toast almonds in a dry pan until golden brown. 

3.

Prepare rice according to package instructions. Rinse and combine with 2 tablespoons of hot butter, turmeric and allspice. Mix well.

4.

Rinse and pat dry swordfish, season with salt and pepper and drizzle with olive oil. Cook on the grill for about 2 minutes per side.

5.

Heat creme fraiche, stir in yogurt and saffron and season with salt and pepper.

6.

Heat remaining butter in a pan and sauté beans and almonds for a few minutes. Season with salt.

7.

Arrange fish on rice and beans and drizzle with saffron sauce. Serve.
