- 4 Swordfish fillet (250-300 grams)
- salt

- 1 Tbsp sunflower oil
- For the sauce
- 100 milliliters Vegetable broth
- 100 milliliters Heavy cream
- 3 Tbsps Mustard
Preparation steps

Season the swordfish steaks with salt and pepper and coat with oil. Refrigerate for 15 minutes. Rinse the tomatoes, remove the cores and cut into slices. Rinse and trim the beans and cook 8 minutes in salted water, then drain well. Peel the onion, halve and cut into strips. Heat olive oil in a pan. Sauté onion, add the tomatoes and the beans and heat through.

For the sauce, heat the vegetable broth. Stir in cream and mustard. Cook the fish fillets on the grill about 7 minutes. Arrange the vegetables on plates, place the fish on top and serve with the mustard sauce.
