125 grams Mozzarella
125 grams Goat cheese
2 sprigs rosemary
4 Tbsps freshly grated Parmesan
salt
freshly ground peppers
½ tsp lemon zest (organic)
1 pinch Red pepper flakes
olive oil (for drizzling)

Preparation steps

Rinse and dry tomatoes, cut off lids. Scoop out pulp with a teaspoon. Drain mozzarella, cut into small cubes and mix with goat cheese. Rinse rosemary, shake dry and pluck off leaves. Add Parmesan to cheese mixture and season with thyme, salt, pepper, lemon zest and red pepper. Stuff tomatoes with cheese mixture. Arrange tomatoes on a hot grill and replace lids. Grill tomatoes for about 10 minutes (depending on grill heat, longer or shorter time) with a lid closed or until tomatoes are slightly soft and cheese is melted. Remove from oven and transfer to a plate. Drizzle with olive oil and serve.
