2 Braised Cucumbers (800 grams)
1 shallot
1 tsp butter (5 grams)
250 milliliters Vegetable broth

1 White roll (day-old)

600 grams Ground steak (for tartar)
1 egg
1 Tbsp Canola oil
2 stalks Dill
100 grams Cream cheese (0.2% fat)
1 tsp spicy Mustard

Preparation steps

1.

Peel cucumber and cut in half lengthwise. Scrape out seeds and cut into pieces. Peel shallot and chop finely.

Heat butter in a pan over medium heat. Sauté shallot until soft. Mix in cucumber and deglaze with broth. Season with salt and pepper and simmer over low heat, 15-20 minutes.

Meanwhile, soak roll in water. Rinse parsley, shake dry and chop leaves. Rinse lemon in hot water, wipe dry and cut in half. Finely grate a pinch of lemon zest. Squeeze juice from lemon half.

In a bowl, combine beef, egg, parsley, bread (squeeze to remove excess water) and lemon zest. Season with salt and pepper and mix well. Shape into sausage-like shapes and thread onto skewers.

Heat oil in a pan over medium heat. Fry meat until golden-brown, turning occasionally, 5-6 minutes.

Meanwhile, rinse dill, shake dry and chop. Using a skimmer, lift cucumbers from liquid and arrange on 4 plates. Stir cream cheese and mustard into the liquid in the pan. Season with lemon juice, salt and pepper.

7.

Drizzle vegetables with sauce, sprinkle with dill and serve with the meat skewers.
