1 Tbsp olive oil

1 kilogram mixed Ground meat
2 Tbsps finely chopped parsley
2 eggs
60 grams breadcrumbs
60 grams black Olives (pitted)
75 grams dried Tomatoes (in oil)
2 Tbsps Caper

1 Tbsp medium hot Mustard

Preparation steps

Oil pudding pan mold and line with bacon slices (up to four) so that slices overhang.

Soak bread in lukewarm water. Cut two slices of bacon finely. Peel onion and garlic and chop finely. Heat oil in a pan and saute bacon, onion and garlic for a few minutes. Add thyme, remove from heat and let cool slightly. Combine well-squeezed bread with onion and bacon mixture, add ground meat, parsley, eggs and breadcrumbs. Chop olives, tomatoes and capers, add to meat mixture. Season strongly with salt, pepper, thyme and mustard. Mix until smooth and place into pudding pan. Cover with overhanging bacon slices and brush with a little oil. Bake in preheated oven at 200°C (approximately 400°F) for about 1-1.5 hours.
