600 grams Halibut (ready to cook)
500 grams Cherry tomatoes
1 bunch Basil
1 garlic clove
400 grams fresh Ricotta cheese
1 tsp thyme (chopped)
1 tsp oregano (chopped)
Sea salt
lemon juice

4 Tbsps olive oil

Preparation steps

Rinse halibut, pat dry and cut into 3 cm (approximately 1 inch) wide strips. Rinse and clean tomatoes. Rinse basil, shake dry, pluck off leaves and chop. Peel garlic and chop finely.

Drain ricotta well or squeeze using a kitchen towel. Mix with herbs and garlic, season with salt, lemon juice and pepper. Spread ricotta filling on fish strips and roll up. Thread fish rolls and tomatoes on wooden skewers, alternating, and drizzle with olive oil. Season with salt and pepper. Grill on the grill for about 5-10 minutes, turning often. Serve.
