Olives are very high in vitamin E and other powerful antioxidants. They can be good for the heart and may protect against osteoporosis and cancer. In combination with the toasts, this recipe is extremely energizing and beneficial for the body.
Use whole wheat toast for more fiber.

Ingredients

- For the red spread
- 3 Tbsps olive oil
- 4 cloves garlic cloves (finely chopped)
- 2 red chili peppers (seeds removed and finely chopped)
- 14 ozs canned Tomatoes (chopped)
- ½ cup Red wine
- 1 ¾ ozs black Olives (finely chopped)
- 4 Tbsps black Onion seed
- For the black spread
- 7 ozs pitted black olives
- 2 cloves garlic cloves (crushed)
- 4 salted Anchovy (roughly chopped)
- 2 Tbsps Caper (roughly chopped)
- 4 Basil (torn)
- Basil (to garnish)
- To serve
- 8 slices white Bread
Preparation steps

For the red spread, heat the oil in a large pan and gently cook the onion until soft but not brown.

Add the garlic and chilli to the pan, cook for two minutes then add the tomatoes and wine, bring to a simmer then turn the heat down and cook very slowly for 30 minutes, stirring from time to time.

Add the olives and black onion seeds, season with salt and pepper and continue cooking for 10 minutes.

Meanwhile, pound together all the ingredients for the black spread, or blend together in a food processor to make a coarse paste. Season with salt and pepper and garnish with the basil leaf.
5.
Cut the bread slices into ghost shapes and toast them until golden brown. Serve with the spreads alongside.
