Ingredients

- ½ cube fresh Yeast (approximately 21 grams)
- 350 grams Pastry flour
- salt
- 4 Tbsps olive oil
- 300 grams button Mushroom
- 1 handful Chives
- Pastry flour (for working)
- 2 scoops Mozzarella (125 grams)
- freshly ground peppers
- 120 grams Pancetta (sliced, alternatively bacon)
Preparation steps
Dissolve the yeast in 200 ml lukewarm water (approximately 3/4 cup).
Combine the flour with 1/2 teaspoon of salt and pour in the yeast water. Add 1 tablespoon of olive oil and knead into a smooth, pliable dough. Cover, and leave to rise in a warm place for about 60 minutes.
Preheat the oven to 210°C (approximately 425ºF).
Trim and halve the mushrooms and fry in the remaining olive oil until lightly browned. Season with salt and pepper. Rinse the chives, shake dry and cut into small rolls.
Roll out the pizza dough into an oval on a floured surface and place on a baking sheet lined with parchment paper.
Cut the mozzarella into slices and distribute over the pizza. Season with salt and pepper and shower with the chives.
Bake for 20-25 minutes until golden brown.
In the meantime, roll up the pancetta into florets and distribute over the baked pizza before serving.
