- 2 Tbsps olive oil
- 2 large carrots (peeled and diced)
- 1 small Turnip (peeled and diced)
- 4 cups steak of gammon (trimmed)
- 4 cups low-sodium vegetable stock
- 1 cup Watercress (roughly chopped)
- 1 flat-leaf parsley (chopped)
- salt
- freshly ground Black pepper
Preparation steps

Heat the olive oil in a large casserole dish set over a medium heat until hot.

Add the carrot, turnip, and a little salt. Sweat for 5-6 minutes, stirring occasionally, until softened.

Add the gammon and stock, stirring well. Cook at a simmer for 25-30 minutes until the gammon is tender.
4.
Remove the gammon from the dish and roughly shred between two forks. Stir back into the dish.
5.
Stir through the watercress and parsley. Season to taste with salt and pepper before serving from the dish.
