12 slices air-dried ham
150 grams Goat cheese
1 Tbsp scallions

3 Tbsps olive oil
peppers (from the mill)
1 Tbsp lemon juice
2 Tbsps White vinegar
1 tsp sugar
½ tsp Mustard
½ tsp Sea salt
4 stalks white Asparagus

Preparation steps

1.

Peel asparagus and cut lengthwise into thin strips with a planer. Blanch in boiling salted water for 1 minute, remove, rinse and lay out to dry on a kitchen towel. Stir goat cheese with chives and asparagus and season with salt and white pepper. Spread cheese mixture on ham slices and roll into sachets.

Stuck some chives in ham rolls and put them aside until ready to use. Rinse arugula and drain. Mix vinegar with sugar, sea salt and mustard until salt dissolves to create vinaigrette then stir in 2 tablespoons oil.

Rinse mushrooms and fry in remaining oil. Season mushrooms with salt and pepper to taste and sprinkle with lemon juice.

Arrange arugula on plates, drizzle with vinaigrette, spread mushrooms on top and then put ham rolls on top. Garnish with chopped leeks.
