Hamburgers on Ciabatta

- 200 grams mixed ground meat
- 1 shallot (finely chopped)
- breadcrumbs
- 1 egg
- 1 Tbsp parsley (chopped)
- 1 tsp marjoram (chopped)
- 1 Tbsp spicy Mustard
- salt

- vegetable oil (for cooking)
- 4 Ciabatta
- Ketchup
- 2 Tomatoes
- 2 Tbsps Ketchup
- 1 Tbsp Chili sauce
- 1 garlic clove
- 1 tsp brown sugar
- 1 Tbsp olive oil
- splash lemon juice
- salt
- cayenne pepper
- also
- 50 grams mixed Lettuce
- 2 Tbsps Mayonnaise
Preparation steps
To prepare the ketchup:
Blanch the tomatoes in boiling water. Remove from the water and remove the skin. Quarter the tomatoes, remove the core, and finely dice. Heat the oil in a pan, and sauté the garlic. Add the tomatoes, then remove from the heat. Mix in the chili sauce and the ketchup. Season to taste with sugar, lemon juice, salt, and cayenne pepper. Let cool to room temperature.
For the hamburgers:
Sautee the shallot in 1 tablespoon of oil. Add the parsley and marjoram, and let cool slightly. Mix the shallot mixture into the ground meat. Add the egg, mustard, and breadcrumbs. Mix until combined. Season strongly with salt and pepper.
Form into patties, then heat the oil in a pan. Cook the patties for 2-3 minutes per side.
To assemble the burgers:
Halve the cibatta. Rinse and try the lettuce, then tear into bite-sized pieces. Add the burger to the bottom bun half, and top with a dollop of mayonnaise and ketchup. Top with the lettuce and the top half of the bun and serve.
