10 ozs prepared Sushi rice
Vinegar water (for shaping the rice)
7 ozs fresh Tuna steak
1 tsp Wasabi
3 ozs fresh Salmon
4 cooked King prawn (or shrimp)
3 ozs fresh Squid (cleaned)
4 strips toasted Nori seaweed (2 x 10 cm) ( 3/4 x 4 inches)

Preparation steps

Divide the sushi rice into 20 portions and shape each portion into an oblong ball with moistened hands. For the tuna nigiri: Thinly slice the tuna fillet into 8 slices, spread the wasabi over 1 side, place it in your hand, top with a rice ball, pressing gently, and shape into nigiri. Repeat with the remaining tuna.

For the salmon nigiri: Thinly slice the salmon fillet into 4 thin slices, spread the wasabi over 1 side, place it in your hand, top with a rice ball, pressing gently, and shape into nigiri. Repeat with the remaining salmon. For the shrimp nigiri: Peel the shrimp, leaving the tail on, butterfly and unfold, spread the wasabi over 1 side, place it in your hand, top with a rice ball, pressing gently, and shape into nigiri. Repeat with the remaining shrimp.

For the squid nigiri: Thinly slice the squid into 4 pieces, spread the wasabi over 1 side, place it in your hand, top with a rice ball, pressing gently, and shape into nigiri and wrap the nori around the squid and rice. Repeat with the remaining squid, nori and rice.

Arrange the nigiri on a serving platter.
