1 kilogram predominantly waxy potatoes
salt
freshly ground peppers
clarified butter (for cooking)
150 grams Gruyere

Preparation steps

Peel the potatoes and coarsely grate. Season with salt and pepper. Add 1-2 tablespoon of clarified butter to a large, nonstick pan. Squeeze the potatoes and add to the pan. Distribute evenly, and press down lightly. If necessary, add some more butter. Cook for 5-6 minutes over medium heat. Turn the hash browns over, adding more clarified butter to the pan. Cook for another 5-6 minutes on the other side until golden brown.

Remove from the pan, and serve with freshly grated gruyere cheese.
