1 kilogram predominantly waxy potatoes
1 egg
1 Tbsp Potato starch
salt
freshly grated Nutmeg
vegetable oil (to cook)

Preparation steps

1.

Peel, rinse and coarsely grate the potatoes. Wrap the bowl in a damp dish towel and drain off the liquid. Mix the grated potatoes, egg and potato starch. Season with salt and nutmeg.

Heap portions of the mixture into a pan with hot oil, flatten and cook for 1-2 minutes, until golden brown. Flip the potatoes and cook for another 1-2 minutes. Drain on paper towel. Keep warm in an oven preheated to 80°C (approximately 175°F). Serve warm.
