1 cup milk
1 Vanilla bean (halved lengthways, seeds scraped out)
0.333 cup hazelnut flour
2 egg yolks
¼ cup sugar
1 cup Dark chocolate (scant)
cup Rum
cup cream (whipped)
fresh Berry (to garnish)
Caramel sauce (to garnish)

Preparation steps

1.
Place the milk, vanilla pod and the seeds in a pot. Bring to the boil and sieve.
2.
Dry roast the hazelnuts and add to the milk. Beat the egg yolks and the sugar over a hot bain marie until creamy. Stir in the milk. Do not allow to boil! Then beat until cold.
3.
Add the chocolate and the rum and fold in the whipped cream. Transfer the mixture into round moulds and freeze for at least 4 hours.
4.
To serve, quickly dunk the moulds in hot water, knock out the parfait and serve garnished with fresh berries and caramel.
