- 20 frozen Spring roll dough sheet (defrosted)
- 1 ¾ ozs Glass noodles
- 2 ½ cups Surimi (quartered lengthways)
- 2 cups cooked Prawn (chopped)
- 1 bunch Chives (chopped)
- 4 scallions (finely chopped)
- 2 Tbsps Fish sauce
- 1.333 cups enokitake Mushrooms
- 1 Cucumber (sliced)
- 3 Tomatoes (sliced)
- Lettuce (cut into strips)
- Chili sauce
- 1 lemon (cut into wedges)

Optional: Fry the spring rolls in hot oil, pat dry with kitchen paper and serve warm with the chilli sauce.
Preparation steps
1.
Placed 20 spring roll sheets on the table and cover with a damp tea towel. Place the noodles in a bowl of warm water and allow to soften (approx. 10 min) then cut up small with scissors.

Mix together the surimi, prawns, chives, spring onions and the noodles with the fish sauce and a pinch of sugar.
3.
Fill the spring roll sheets as desired - placed the filling on the lower end along with the mushrooms, cucumber, tomatoes and lettuce. Roll up then cut in half and serve with the chilli sauce and lemon.
